So how much do we need to get (Paper 1, 3 6 combined) for physics and chemistry to get an A* ?
The minimum grade out of 180 to get an A* would be...?

it would not hav minimum, i think we will hav to score high in all 3 variant
Paper 1 - 34/40
Paper 3 - 40-58/80
Paper 6 - 32-36/40

hey these are just estimates and they do not mean that they are the perfect marks required. for getting an A* we also need to keep concentration on drawings and presentation NOT only marks. hoping to get an A*  :)

I have a question, say for instance if I attained a considerably high score in Paper 3, but did not reach the minimum grade threshold for an A in Paper 1, would I still be able to attain an A / A* ?

Do not go where the path may lead. Go instead where there is no path and leave a trail.

it does not depend only on 1 factor. there are many of them. if u read Collins IGCSE then they mention dat total marks are:
PAPER 1 - 20% OF MARKS
PAPER 3 - 50% OF MARKS
PAPER 6 - 30% OF MARKS

now if they consider these then u can understand dat getting A* is not very easy

The achievement of each candidate on each unit is reported as a grade
on the scale A*–G and as a UMS (Uniform Mark Scale) score.
UMS scores are related to grades as follows:

                                          Range of UMS scores
Objective test                    Written paper                 Centre-assessed unit                Grade
45–50                                    90–100                              90–100                            A*

This is only for A* if u want to see al marks for all grades til U then go to :
