Bothe CIE and Edexcel are recognised and appreciated the same by Universities.

Edexcel is definitely easier than CIE, however, CIE subjects train/prepare you better for University life and work where wont be an easier option in life.

The number of A Level subjects you do depends on your target University. Call them up and ask or check their website.

My only advice : study hard. If you dont you will live to regret it.
