PS: what happenes if you dont know the subject or the topic they gave you..... my question can u ask him if he can explain or you can choose from a list ? :D

No, you cant choose. They will choose a topic and give you, i guess, 2-3 mins to read it.
They wont give such topics which students wont know anything about and besides there are points written on it to help you out.
